With the help of either Duncan Hines Super Moist Yellow Cake Mix or Duncan Hines Butter Cake Mix this recipe always get rave reviews as if I've been in the kitchen for hours.
Ingredients
- 1 - Box Duncan Hines Yellow Cake Mix
- 2 - Ripe Medium Bananas (Mashed)
- 2 - Large Eggs
- 1/2 - Cup Water
- 1/3 - Cup Canola Oil
- 3/4 - Cup Chopped Walnuts
- Note: If using the Duncan Hines Butter Cake Mix, substitute the 1/3 cup of canola oil with 1/2 stick of softened margarine or butter.
Directions
- Using a mixer, mash bananas in a medium mixing bowl until there are no lumps.
- In a separate mixing bowl, dump all of the remaining ingredients, except the walnuts and blend with a mixer for 1 minute.
- Add the mashed bananas and walnuts to the cake batter and blend for an additional minute.
- Pour into a 9 X11 glass pan, sprayed with cooking oil and bake at 375 degrees for 30 minutes.
- Let cool and slice into serving sizes.

BANANAS: 3-4 ripe mashed bananas are called for, or approximately 1¼ cups. Another kind of fruit could be subbed in this recipe, too. Try some applesauce, frozen blueberries, or strawberries. Even mashed mango or another type of fruit with a similar consistency to bananas could work. Be sure to use about 1¼ cups of fruit. Results will vary.
ADD-INS: Chocolate chips are a favorite addition to banana bread, but feel free to use dried fruit or nuts, caramel chips, white chocolate chips with cranberry raisins, or anything the chef dreams up! Just be sure to use the same amount that the recipe calls for.
How to Make Cake Mix Banana Bread
It’ so simple to make:
- Mash bananas, prepare loaf pans.
- Mix all ingredients together.
- Pour into loaf pans and bake (per recipe below).
For Muffins:
- Preheat oven to 350°F.
- Mash bananas & line muffin tins with paper liners (or spray with pan release).
- Mix all ingredients together (per recipe below).
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
In the Crock Pot:
Believe it or not, cake mix banana bread can even be baked in the Crock Pot or slow cooker!
- Grease the crock of a slow cooker and preheat it to “high” setting.
- Mash bananas and mix all ingredients together (per recipe below).
- Pour into the crock or the slow cooker, or into a greased and floured loaf pan that can be placed inside the crock.
- Cover the crock with a clean kitchen towel to catch condensation, and place the lid over top.
- Cook on high for 2-3 hours. Make sure a toothpick inserted in the center comes out clean.
Storing Banana Bread
Store banana bread made with eggs in the refrigerator in an airtight container. Cake mix banana bread is also the perfect snack or dessert for freezing. Wrapped tightly in a double layer of plastic wrap plus aluminum foil, or stored in an airtight freezer container, it will keep indefinitely. But try to use within 3 months for optimum freshness.

Ingredients
- ▢3-4 ripe bananas about 1 ¼ cup
- ▢1 box yellow cake mix , or white cake mix, dry mix only
- ▢2 eggs
- ▢1 cup add-ins - such as chocolate chips, chopped nuts, dried fruit, etc. optional
Instructions
Preheat oven to 350°F. Grease and flour two 8½ x 4½ loaf pans (or 8"x 4"), or use pan release.
Mash bananas.
In a large bowl, add dry cake mix, bananas, and eggs and stir until well combined.
Fold in chocolate chips (and nuts) if using. Divide evenly between the two loaf pans.
Bake 35-40 minutes, or until a toothpick comes out clean.
Cool for 15 minutes in the pan then remove from pan and place on a cooling rack. Cool completely. Slice and serve!
