Breakfast casserole is traditionally made with eggs, cheese and usually some type of meat (sausage, bacon or ham). Some breakfast casseroles have hash browns mixed in, but this particular recipe has a crust made of hash brown patties.

SIMPLE INGREDIENT SWAPS FOR BREAKFAST CASSEROLE

One of the things I love most about this recipe is how versatile it is. The hash browns and eggs are kind of a must, but beyond that, you can easily swap things out based on your family’s preferences (and what you have in the fridge)!

Swap out the meat: The recipe calls for ham, but you could easily swap that out with sausage or bacon or even leave out all the meat if you prefer. Or maybe even try a combination of meats – ham, bacon and sausage all taste great together!

Swap the cheese: The original recipe calls for cheddar and Swiss, but you can use any cheese you want! We really like using all cheddar, but you can use Monterey Jack or really any other type of cheese or combination of cheeses.

Add some veggies: This breakfast casserole is pretty plain and veggie-free but go ahead and add as many veggies as you want. Add peppers, onions, mushrooms… all great in this recipe!

Ingredients in Hash Brown Breakfast Casserole

Frozen hash brown patties – These can be found in the freezer section of the store, near the bags of shredded frozen hash browns. They usually come in boxes of 10, which works perfectly for this recipe!

Butter – Everything is better with butter, right? The butter helps to add flavor to the hash browns!

Ham – You can dice up some ham or you can cheat like I usually do and buy it pre-diced. For a vegetarian option, you can leave it out. If you just aren’t a huge fan of ham, feel free to swap in sausage or bacon instead.

Cheese – The recipe calls for a cup of cheddar and a cup of swiss cheese, but you can really use just about any combination or kind of cheese that you want.

Eggs – Can’t forget the eggs! Holds everything together and adds so much protein to the recipe.

Milk – I use 2% because that’s what we have in the refrigerator, but pretty much any type of milk will work fine.

Salt – Adds just the right amount of flavor to all of those eggs! You can leave it out if you prefer less salt – there is quite a bit of flavor between the ham and the cheeses in the recipe.

How to make Hash Brown Breakfast Casserole

Preheat oven to 350°.

Place hash brown patties in single layer covering the bottom of a greased 9X13 pan.

Pour melted butter evenly over the hash brown patties. Bake for 20 minutes. Remove from oven.

Sprinkle the ham and cheese over the hash brown layer.

Beat the eggs in large bowl and add the milk and salt. Stir until well combined. Pour egg mixture over the cheese and ham and bake for about 30-40 more minutes, or until egg mixture is completely set in the middle. Let it set for about 10 minutes before cutting and serving.

  • 10 frozen hash brown patties

WHEN TO SERVE CROCKPOT BREAKFAST CASSEROLE

Hash Brown Breakfast Casserole is perfect for special occasions (like Christmas morning!), but it is simple enough to make for just a regular weekday morning too. I love being able to serve my kids a filling breakfast before they rush off to school and they absolutely love this recipe.

I don’t know about all of you, but getting kids up and ready in the mornings can be a little chaotic and sometimes everyone is just grabbing whatever they can find to eat. I just feel so much better when my kids get a really good breakfast before they head off for the day.

This casserole is also hearty enough to eat for dinner! We love eating breakfast for dinner!
