I remember when I lived in Italy how easy and inexpensive it was to get prosciutto at the grocery store. After making a habit of eating prosciutto and spicy salami sandwiches every day, coming back to Denver was a rude awakening when it came to my meat cravings. Though prosciutto was available to me, its cost slide outside of my poor college student budget and thus I was left to buy prosciutto only for very special occasions…

Good thing #5 about becoming an adult = having the funds to buy prosciutto whenever you want.

This is directly behind buying alcohol and eating cookie dough for dinner of course….

I am big believer in wrapping prosciutto around anything you can. Shrimp, asparagus, melon, scallops, the list goes on and on. Surprisingly enough, this is the first time I have wrapped chicken in this wondrous meat (which in my opinion is better than bacon by leaps and bounds… THAT’S saying something).

Now this recipe may not seem like much, to be honest it only takes a few minutes of active cooking, but the flavors explode in your mouth. Whoever is eating it is going to think it took you put a lot more effort into it than you really did (and that’s the best feeling in the world isn’t it?).

So it should go without saying that anything stuffed with cheese and wrapped with prosciutto is . . . a brilliant idea. Right?


We’re talking tender and juicy chicken breasts oozing with ooey, gooey, melted cheese, all held together by thin slices of umami-filled prosciutto.

How to Make Prosciutto Wrapped Chicken

Chicken stuffed with cheese and wrapped in prosciutto is an easy-to-make gourmet meal that packs a ton of flavor.

Prosciutto-Wrapped Stuffed Chicken

You'll feel like a professional chef preparing this chicken dish, which is stuffed with oozing cheese and then wrapped in savory prosciutto.

Chicken wrapped in prosciutto stuffed with mozzarella

Ingredients

  • Chicken breasts, boneless and skinless - 2, butterflied and flattened
  • Basil, dried - 1/2 tsp
  • Cheese, fresh mozzarella - 2 oz (sub fontina, gruyere)
  • Prosciutto, thinly sliced - 6 slices
  • Oil, cooking - 1 Tbsp
  • Cornstarch - 2 tsp
  • Stock, any type - 1/2 cup
  • Wine, white - 1/4 cup

Instructions

Prep

  1. Chicken breasts – Butterfly chicken breasts, by slicing chicken breast in half, making sure you don’t slice all the way through so that the two halves are still connected. Open up chicken breasts, like opening a book. Place parchment paper over breasts and pound with a tenderizer, until breasts are about 1/2” / 1.25cm thick. Sprinkle on basil with some salt and pepper and tenderize with a fork. Arrange cheese on one half of each chicken breast (you might need to tear up cheese slices so they fit). Fold chicken breasts closed and wrap each stuffed chicken breast with 3 slices of prosciutto. Watch this video to see how it’s done. (Can be done up to 1 day ahead)

Make

  1. Heat oven to 375F / 191C.
  2. Heat a skillet over medium-high heat. Add oil and then prosciutto-wrapped chicken breasts to heated oil. Sear on each side for 2-1/2 minutes and then transfer to the oven, cooking for another 8 to 15 minutes, until chicken reaches 165F / 74C.
  3. Stir cornstarch into chicken stock.
  4. When chicken breasts are done, remove from pan to rest. Place skillet over medium heat and pour in white wine, scraping up any bits remaining in the pan. Next add chicken stock and simmer for 2 to 3 minutes, until sauce is thick and creamy. Slice chicken breasts in half and spoon sauce over breasts. Enjoy!
