Hello fresh yogurt marinated chicken with garlic sauce

Another offering from the folks at @HelloFresh.

This meal kit has chicken cutlets as the protein. The two pieces of chicken were uniform in thickness. They looked like chicken breast that had been cut in half. Both needed some extra trimming to remove fat and veins. The chicken is marinated in a Tunisian seasoned (caraway, coriander, cinnamon, and turmeric are the most prominent flavors) yogurt base while some of the other meal items are prepared. If I make this meal again, I would let the chicken marinate overnight instead of only a few minutes. The chicken is quickly sautéed and then plated to keep warm. The flavor is excellent and compliments the other items nicely.

I love Israeli couscous. There is something about the texture and the way it can be toasted to get a nutty flavor. It is also extremely easy to make. I am not a big fan of pistachios, so I left them out of the couscous recipe. The couscous is toasted in butter before the rest of the ingredients are added in. The lemon adds a brightness to the toasted couscous and the cilantro adds an earthiness to the dish. This was an incredibly good side for this meal.

Chili roasted carrots were the vegetable and consisted of diagonally sliced carrots drizzled with olive oil and a sprinkling of chili flakes. The recipe called for them to be roasted on the top rack of the oven for 20-25 minutes. Mine were a little bit over cooked (I purchase a small KitchenAid convection oven recently and did not adjust the cook time) but that was my fault. The ones that were not too burnt were delicious. The chili flakes were a nice counter to the sweetness of the carrots.

There is a cold yogurt, sour cream, and yogurt sauce for the chicken that is tasty, but would be better prepared the day before and allowed to develop flavor. Still exceptionally good with the chicken.

This meal kit was easy to prepare, around thirty minutes from the start until I was sitting down to eat. Another nice thing about these meal kits is the diversity of recipes. Although I like recipes like this, if I did not have everything in a kit like this, I would probably have just sautéed the chicken instead of making a meal like this.

This kit is priced out at the $8.99 per person and is well worth it. I did not add anything to it except for some coffee as a beverage and was satisfied after I finished eating.

It was very tasty, yum! I don’t like cilantro so I left it out, but super delicious. I made extra sauce and drizzled it over everything!!

I always use the empty bag for trash while I’m cooking and every time there’s cilantro I’m “And out of the bag... and back into the bag...”

This one was super delicious! I threw some garlic in with the pistachios while making the couscous because I always want more garlic, lol. I also made extra sauce. Thought about drizzling hot honey on the carrots so I might try that out when I eat the second portion.

Loved this one. HF forgot to give us pistachios, but even without, this was one of our favorite meals so far.

Do you wipe off yogurt marinade before grilling?

No, do not rinse off the yogurt marinade, as it will create a delicious crust on the outside of the chicken. Simply scrape off any excess marinade then cook the chicken directly.

What does yogurt marinade do for chicken?

Yogurt tenderizes meat much more gently and effectively than regular marinades. While acidic vinegar- or citrus-based marinades can toughen proteins like chicken breast to a rubbery consistency, yogurt slowly tenderizes them, resulting in meat that can practically be pulled apart by hand.

What happens if you marinate chicken in yogurt too long?

We like a little bit of tenderizing with meat, but when your chicken thighs are exposed to lemon juice, lime juice, yogurt, or vinegars for too long, the texture of the meat turns from tender to mushy and stringy, two words that have never been used in tandem to describe something pleasant.

How long can you leave chicken marinating in yogurt?

You really only need 15 minutes to see a difference in your chicken, but since lactic acid doesn't come with the same risk of making food mushy as other acid-based marinades, you can leave the chicken in the yogurt overnight or up to 24 hours.
