“I’m not sure how old Rick is, because if you look closely at the show, no one really has birthdays. So they are in a weird time-like hole, time loop, to some degree. But whatever he does is maintaining himself in his 70s,” Marder said. “Age and all that stuff comes up all the time, because people are like, ‘Oh, it can be such and such’s birthday’ and we’re like ‘We don’t do those on this show, we’ll do a thousand Christmases but we’re never going to show a birthday.’ It’s kind of fun to keep everyone in a cartoon the same age, as it is.”
That answers one question. But if Rick is in his seventies, how is he able to stay so spry? That’s where the world of fan theories come into play. According to an argument by u/ComparisonWorld2, Rick looks so young and can be so athletic because he body surfs. We’ve seen him do this before in the aforementioned “Big Trouble in Little Sanchez” and “The Rickshank Rickdemption.” Basically this theory posits that every time Rick starts to age a bit more than he wants, he switches to a body that’s slightly younger than her current self. He may have even installed cyborg parts or developed special serums to keep him young and limber. We already know that Rick routinely mods out his body. “The Whirly Dirly Conspiracy” saw him turn his own arm into a gun, and in “Rick & Morty’s Thanksploitation Spectacular” he was bummed out when yelling Inspector Gadget’s “go go” produced feathers instead of a sci-fi weapon. If he can do that, he could totally find a way to eliminate wrinkles.
As with so many things in this show, Rick’s age doesn’t really matter. He will always be the smartest man in the universe and on par with a god. But as with so many other details in this wild show, it’s fun to think about.

Chronologically Morty should be about 18 because every season, the show seems to imply a year has passed but apparently the creators keep stating that he's 14.

Morty was 14 years old when he was first featured on Season 1 of the Adult Swim show. Then the series recently confirmed that Morty hasn’t aged yet, so he’s still 14.
In episode 3 of season 5, titled “A Rickconvenient Death”, emphasized Morty’s age and the intensity of teenage love to continue wowing audiences after the season premiere left fans speechless.
The episode featured Planetina (voiced by Alison Brie), who was Morty’s new crush. Then Beth (in the voice of Sarah Chalke) questioned the age difference. Planetina was a “sensible amalgam of natural elements”.
So age didn’t exactly “apply” to her. But it was clear that Morty was still just a kid. Later, Beth also confirmed that Morty was as old as he was when Rick and Morty premiered.
In speaking with Collider ahead of the season 5 premiere, Roiland reflected on how long it has been since Rick and Morty season 1 and the scandal of the campaign to cancel it.
“It’s funny because it’s been almost 10 years. The show premiered in December 2013,” Roiland said. “I’ve thought about this. I say, ‘I think it’s been less time than that’ “in regards to the chronology within the series.
Then the Rick and Morty co-creator revealed his thoughts on Morty’s age, hinting that he wants the character to stay in high school for some time.
“That’s kind of interesting because that’s where the cartoon comes in. I don’t want to see Morty graduate from high school. Personally, I’d rather have high school always be on the table.”
The RIck and Morty creator added that “there are a lot of fun stories you can do there, and for me, that’s a great place to look for characters and stories,” so Morty Smith is unlikely to grow up.
