Pork loin is one of my favorite cuts of meat because it's so versatile. You can roast it whole in the oven, slice it thin for sandwiches or paninis, or cut into chunks for stir fry dishes like kung pao pork. The best part about cooking with pork loin is that if you're careful not to overcook it then even when cooked through there's no dryness or toughness. Pork loin is also one of the leanest cuts with little to zero marbling, so it's a great cut for people following low calorie diets. Smoked pork loin is also naturally low carb so it works for diets like paleo and keto.

A pellet smoker is simply an electric oven that burns wood pellets instead of gas or charcoal. A pellet grill is great for beginners has become one of our favorite kitchen purchases this past year.

Ingredients

Boneless Pork Loin - we cooked a three pound pork roast. Trim off any excess fat or silver skin with a sharp knife.

Honey - the honey helps the rub stick to the meat.

Smoked Paprika - beautiful color and nice smoky flavor.

Garlic Powder - one of my favorite spices. We use garlic on everything.

Kosher Salt & Black Pepper - season to taste but remember that the salt and pepper and only touching the outside of the meat. When this is the case we season more generously than if we were salting a bite of food.

Variations

Spices - try cayenne, chili powder, onion powder, and/or chipotle powder.

Marinade - if you'd rather use a marinade than a dry rub try this marinade it is just as good on pork as it is on london broil. For some sweetness add a little apple juice.

Sauces - serve with a classic red barbecue sauce, white bbq sauce, applesauce (my kids love applesauce with their pork), or even good ole ketchup.

Vegetables - add vegetables like carrots and potatoes to the pellet smoker with the pork loin. Try smoked cauliflower or broccoli for low carb option! You really can cook almost anything in a smoker.

Brown Sugar - if you like a little sweetness on your meat feel free to add about half a cup of brown sugar to the rub.
