My love for cheesecake happened long before The Cheesecake Factory was even a thing. I remember my mom making classic cheesecake with strawberry topping for Sunday night dessert and it was always a favorite.

There was one particular episode of Paula Dean on The Food Network where she was stuffing strawberries with cheesecake and I thought it was an incredible idea.

I love to stuff lots of things with cheesecake filling — especially my cheesecake stuffed french toast. If you haven’t had it yet, you must! Cream cheese stuffed cookies, apples, cupcakes, you name it, cheesecake can be stuffed into just about anything and taste amazing.

How to make cheesecake filling for strawberries

The concept for these no-bake Cheesecake Strawberries is super simple. You’ll start with large, juicy, beautiful strawberries. I like to slice the bottoms off of the strawberries so that they stand up better.

The cheesecake filling is made very simply with heavy cream, cream cheese, confectioners’ sugar and a little bit of vanilla extract.

You’ll pipe the filling right into each strawberry then top with graham cracker crumbs for a delicious treat that is perfect for summer, perfect for valentine’s day, and really, perfect for just about any occasion.

If you don’t have a piping bag, just use a ziplock/plastic bag, spoon the filling into the bag, then cut the tip and squeeze filling into each strawberry. It works just as well!

Cheesecake Stuffed Strawberries make a beautiful treat for showers and weddings. And you can take it up a notch and dip the bottoms in melted chocolate, if you wish (not shown here). Cheesecake Stuffed Strawberries dipped in chocolate, need I say more?

These strawberries are delicious and beautiful! You can make this recipe low-carb/keto by substituting the confectioners’ sugar with something like Swerve Confectioners. It’s a zero-calorie sweetener, and my personal favorite.

Feel free to make these ahead of time, but wait to sprinkle the graham cracker crumbs until right before serving so that they don’t get soft and mushy.

INGREDIENTS

  • 20 large, ripe strawberries
  • 1/3 cup heavy cream
  • 2/3 cup cream cheese
  • 1/4 cup confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 3 graham crackers (I used gluten-free cookies)

DIRECTIONS

  1. Cut the leaves off of the strawberry, then use a melon baller to scoop out the center of the strawberries. Slice the bottom off the strawberries so they stand up.
  2. Place the cream in a large bowl and whisk until soft peaks form. Add in the cream cheese and whisk again for a few seconds to combine, then add in the confectioners’ sugar and vanilla extract. Whisk again for a few seconds until the mixture is light and fluffy.
  3. Spoon the mixture into a piping bag with a fluted tip and pipe the cheesecake mixture into the strawberries so it fills the hole. Keep piping until you have a little mound of cheesecake filling on top of the strawberries. Place each strawberry in a petit fours case on a large plate or tray.
  4. Crush the crackers by placing them in a bag and using a rolling pin to bash them into crumbs. Sprinkle crumbs on each of the strawberries before serving.

I love to make mine with lots of vanilla bean paste but it’s also great with the addition of lemon or orange zest. Almond extract is also a delicious addition!

Making up the filling is super simple as well. 

It’s cream cheese, powdered sugar, and vanilla bean paste. If you don’t have any vanilla bean paste vanilla extract can be in place BUT I recommend getting a bottle of the paste soon.

I’m not even kidding when I say it’s vanilla bean heaven – it is! It adds the most luxurious vanilla flavor PLUS you get all those pretty little vanilla beans specs.

To finish, I dipped the stuffed strawberries in graham cracker crumbs.

It gave the strawberries the total cheesecake taste.

To make it even fancier you could drizzle the tops with chocolate, add mini chocolate chips to the filling or even add lemon or orange zest to the filling.

This recipe can be easily altered to fit just about any flavor profile you’re going for.

One small thing I will note about this dessert – it’s best eaten within a day of making them.

If I’m bringing them to a party I like to make them the morning of the party.

This is simply because the strawberries can start to “ripen” a bit if sitting around for too long.

Oh, and you totally don’t have to cut off the bottom to make them stand up. They taste just as great laying down!

Ingredients

  • 1 pound large strawberries
  • 1 (8 ounce) block cream cheese, room temperature
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla bean paste (or extract)
  • Graham cracker crumbs

Instructions

  1. Rinse strawberries and cut them around the top of the strawberry, leaving a nice hole to fill the strawberry with filling.
  2. If the inside of your strawberry is not hollow you can use a small knife and clean out some of the insides. If you are using large strawberries they tend to be hollow in the middle.
  3. Optional: If you would like your strawberries to stand upright (like you see in the picture) slice a tiny section off the bottom. I normally skip this step and just let them rest on their side.
  4. Continue until all the strawberries have been prepped.
  5. After the strawberries are prepped add cream cheese, powdered sugar, and vanilla bean paste to the bowl of a stand mixer.
  6. Mix together until smooth and fully combined.
  7. Add mixture to a piping bag and fill the inside of the strawberries until the filling reaches the top of the strawberry.
  8. Dip the top of the strawberry in graham cracker crumbs.
  9. These are best-tasting the day they are made.

Notes

Optional: Feel free to add mix-ins to the cream cheese - lemon zest, flavored extract, or even mini-chocolate chips.
